Simple Rice Pudding

Rice pudding invokes a lot of childhood memories for many people. Treat yourself to a warm bowl of classic comfort.

  • 1/4 cup of Arborio Rice
  • 2 cups of Milk nut or soy works here too
  • 2 tablespoons of Sugar
  • A pinch of Salt
  • 1 teaspoon of Vanilla Extract
  • 1 or 2 pieces of Lemon Peel


  1. Place all the dry ingredients into a medium sauce pan. Pour in the milk and bring to a low boil on medium high heat. Stir and reduce to low and simmer gently for 35 - 40 minutes, or until the rice is soft and the milk is mostly absorbed.
  2. Remove the lemon peel and serve either warm or cold with cinnamon or fresh fruit.

Recipe Notes

Cinnamon Rice Pudding: Omit the lemon peel and add a whole cinnamon stick. Dust the finished rice pudding with some cinnamon.
Lemon Rice Pudding: Kick up the lemon-y flavour by adding more lemon peel.
