Simple Rice Pudding
Rice pudding invokes a lot of childhood memories for many people. Treat yourself to a warm bowl of classic comfort.

of Arborio Rice
nut or soy works here too
A pinch of Salt
of Vanilla Extract
or 2 pieces of Lemon Peel
Place all the dry ingredients into a medium sauce pan. Pour in the milk and bring to a low boil on medium high heat. Stir and reduce to low and simmer gently for 35 - 40 minutes, or until the rice is soft and the milk is mostly absorbed.
Remove the lemon peel and serve either warm or cold with cinnamon or fresh fruit.
Cinnamon Rice Pudding: Omit the lemon peel and add a whole cinnamon stick. Dust the finished rice pudding with some cinnamon.
Lemon Rice Pudding: Kick up the lemon-y flavour by adding more lemon peel.
