Hot Raspberry Sauce (Heißen Himbeeren)

This sauce over vanilla ice cream is a true German classic. It's a simple, company-worthy dessert that brings a taste of summer to the winter months.

Ingredients

  • 2 1/2 cups of Frozen Raspberries
  • 3 tablespoons of Sugar or to taste
  • 1 tablespoon of Raspberry Liqueur optional

Instructions

  1. Let frozen raspberries thaw. Place thawed raspberries with juices, sugar and alcohol (if using) into a small pot and bring to a low boil on medium heat. Adjust sugar and liqueuer flavours to taste. Boil sauce for 2 - 3 mins and then remove from heat. Let it cool down a little before serving over vanilla ice cream and topping with whipped cream.

Recipe Notes

German Himbeergeist is the tradition alcohol for this but a raspberry liqueur, vodka or red wine works as well.
For a thicker sauce, add a small amount of cornstarch while it's boiling.
You can use blackberries for this sauce too.
